Cheesy Vegetarian Quinoa Casserole

This meatless meal is sure to be a crowd pleaser in any household. It is loaded with fibre and protein from the black beans and quinoa, and packs in a good amount of vegetables! This Mexican inspired recipe can be easily customized based on likes and dislikes. Don't like zucchini? Take it out and add more bell peppers. Like spicy dishes? Choose hot salsa or amp up the quantity of chili flakes. This recipe is fairly forgiving, so feel free to play around with the specifics.

Go Green Avocado Pasta Sauce

Magnificent Mulligatawny Soup


 This soup balances sweet, savoury, and spicy in every bite. The blend of rice, chicken, vegetables, and crisp apples, make this recipe a definite crowd pleaser. This soup is a go-to recipe of mine whenever I am sick as the spice from the curry and chill powder can really do wonders opening up your sinuses. This is also a "one pot" meal, making clean up a breeze (important to me as I unfortunately don't have a dishwasher….).

Stuffed Acorn Squash: Simplified


Whenever possible, I like to make recipes that include in-season produce. During the winter in Canada, our selection of in-season vegetables can be a bit limited. However, winter squash are a go to of mine! I love the versatility of winter squash; one variety can be substituted for another in almost any recipe. I chose acorn squash for this stuffed squash recipe, although you could also use Kabocha squash, sweet dumpling squash, or any other variety you have on hand.

A Healthy Twist on Classic Alfredo Sauce



Pasta please! Every time I think about preparing an indulgent meal, I turn to my all time favourite food: pasta! Because I enjoy eating pasta so much, I am always looking for new ways to add a healthier twist to my favourite dishes. Whenever I am out to eat at a restaurant, I usually gravitate towards rich and creamy pasta dishes loaded with veggies. So, I decided to make a healthier version of the classic Alfredo sauce that does not sacrifice flavour!

Easy Lentil Spaghetti Sauce



With all the busy hustle and bustle of starting up again in the New Year, it can sometimes be challenging to create healthy, yet convenient meals for the family. This time of year, we often also have our budgets in mind after holiday spending.  I love this lentil pasta sauce for its taste, nutrition, convenience and cost savings. This recipe is modelled after a traditional ground beef spaghetti sauce, although it packs a little extra nutritional punch with lentils added rather than hamburger.
